About the research

Making fries is something we Belgians are already very good at that. Yet it can be even better thanks to technology, says Wout Vierbergen (ILVO - KU Leuven). He uses hyperspectral cameras and artificial intelligence to detect black spots under the peel of a potato. In this way, he wants to help fry producers detect blistered potatoes so that they are left with only the finest specimens to make our fries.

Passionate about technology, food and agriculture, and sustainable systems, it is no coincidence that these aspects recur in Wout's research. His doctoral research at ILVO (Flanders Research Institute for Agriculture, Fisheries and Food) and the KU Leuven investigates how to measure food quality by combining infrared light measurements and innovative artificial intelligence. The aim of this research is to contribute to processes used in the food industry to guarantee food quality and safety.
